You'll likely be able to differentiate between standard chests and eyeball chests that you might find at Hogwarts Castle. It is very important to know that you can only open these chests when you have made enough progress in the storyline. If you try to approach one of these chests and they close automatically, you should probably focus on something else for a while!
You can open these "Eye Chests" with the Disillusionment Spell. The Secrets of the Restricted Section quest is where you ideally want to be. If you actually finish some side quests like the Cache in the Castle quest, you will reach the above quest in a while. In the middle of the quest, meet up with Sebastian to go to the restricted area of the library before learning the Sobering Up spell. The Sobering Up spell allows you to sneak around the castle without being spotted.
Once you've got the spell, all you have to do is equip it on your hotbar and make sure to use it whenever you come across one of those eyeball chests. Also, stay some distance from the Eyeball's chest when activating the spell or it will close as normal. Once activated, go to the chest and loot it. You now have access to the coins you have been looking for!
